Scoring

The burritos are scored on four criteria: beans, cheese, tortilla, and salsa.  They are given a score between one and five (five being the best), based on the following recommendations:

Beans should be house made, not canned.  The consistency should be smooth, not grainy or chunky. Burritos that contain only whole beans are not considered, although the occasional whole bean is a nice touch.  They should not be over salted or contain too much grease.

Cheese should be thoroughly melted, and evenly spread throughout the burrito.  There shouldn't be too much cheese, and white oaxacan style cheese is preferred to yellow cheese.

The tortilla should be fresh, not stale, and warmed on a grill or comal rather than in a microwave.  House made tortillas are more desirable than store bought.

The salsa should be spicy and contain fresh vegetables and herbs.  Salty, vinegar based salsas are not preferred, and there should be a variety of salsas available.  A salsa bar with pickled vegetables is also desirable.
